Myzithra Cheese and Burnt Butter Pasta

I am so in love with The Old Spaghetti Factory: Ala Homer Pasta its pretty much divine. I decided spur of the moment to be daring and try and make it for dinner tonight for my hard workin' man! Really it was so cheap to make, I found the cheese at Smith's Marketplace for $4.40 which gave us way more than enough for just me and hubs. I already had the whole wheat spaghetti in my pantry and the butter as well! Here is the recipe and you have to try it for yourself!

Ingredients:
1 Cup Butter
1 Cup Myzithra Cheese
And pasta of choice {I chose whole wheat spaghetti}

Directions:

There is a terrific dish served by The Old Spaghetti Factory chain, called Spaghetti with Browned Butter,. It is served topped with shredded Myzithra cheese (a Greek hard cheese). If myzithra is not available, a blend of ricotta salata and romano is suggested

Browned Butter Procedure: Cut 2 sticks of butter into 8 pieces and place in a 2-quart sauce pan. Place the pan of butter on a burner on medium heat. Bring butter to a slow boil (about 5 minutes).

Once the butter begins to boil, stir constantly to prevent residue from sticking to the bottom of the pan. As the butter cooks, it will start to foam and rise. Continue stirring, otherwise the butter foam could overflow (about 5 minutes) and catch fire.

Once the butter stops foaming and rising, cook until amber in color (about 1 to 2 minutes). It will have a pleasant caramel aroma.

Turn off the heat and remove pan from burner. Let the sediment settle to the bottom of the pan for a few minutes.

Pour the brown butter through a strainer into a small bowl. Do not disturb the residue at the bottom of the pan.

The brown butter can be stored in the refrigerator and reheated in a microwave as needed.

Boil the pasta of choice until Al Dente. Drain pasta and divide into four servings. Spread 1/4 cup of Myzithra over each pasta serving. Top with 1/4 cup of hot brown butter.

Ok I know that all of have had the imitation Cafe Rio salads that sort of taste like the real deal but not really...am I right? I promise that this tasted exactly like the real deal at the restaurant, all that will be lacking is the spumoni ice cream at the end of the meal! Let me know how it turns out! Enjoy! Love love.

ps: Did you know that myzithra cheese is made from sheep's milk? Um yeah I didn't...I had to overlook that and convinced myself it was cow's milk ;) {I don't do other animal/milk/cheese..it weirds me out}

  1. I'm for sure going to try this, I miss the Spaghetti Factory, I am told it was closed down, which pains me to think about. Remember how you like Gyros until you found out it was lamb meat :) Cute site Morg, I'll for sure be visiting often !

  4. I'm going to try this. I bought the cheese before but I didn't brown the butter and it was kinda gross. I bet this is delicious!

  6. Yum! I JUST had this over the weekend -couldn't stop myself from ordering it. I too first fell in love with it via The Spaghetti Factory. We have one here in Seattle, but it is too out of the way for me. So, at a quick over-night to Gig Harbor, we found a great little italian place that a perfect dish! Thanks for the recipe!
